I started my academic life as a plant physiologist and ended up working with fish. The common thread is the urge to understand protein structure, and how we can manipulate their function. My core mission is to maximise value from marine by-product streams and support industry and iwi partners to achieve this. My current research focus is gaining an understanding of marine proteins (largely collagen) and polymers structures, and contribute to the development of processing techniques to manipulate their physical and molecular properties to improve them as biomaterial, cosmetic, food and nutricuetical ingredients.
